Low-Fat Guacamole

10-ounce pack of frozen peas
1 small ripe avocado
1/2 cup cilantro, stems removed

2 ripe tomatos, diced
4 cloves garlic, diced
1/3 cup chopped onion (optional)
Squeeze of fresh lime juice
Salt and pepper
Pinch of red chili powder

Cook peas according to package instructions. Empty into a colander, drain and rinse with cold water.
Place peas, avocado and cilantro in a blender and blend to desired consistency. Spoon into a bowl with chopped tomatos and onion.
Add a squeeze of lime juice, stir and serve.
Yields 2 cups.

Low-Fat Spinach Dip

1 pint low-fat sour cream
1 cup light mayonnaise
1 package Knorr vegetable soup mix
1 (10-ounce) package frozen chopped spinach, thawed and drained
1/2 cup chopped green onion
1 can chopped water chestnuts

Combine all ingredients. Refrigerate until ready to serve. Serve with veggie sticks or in a round bread bowl with slices of bread on the side.

Low-Fat Black Bean Dip

1 can cooked and drained black beans
4 teaspoons tomato paste
4 cloves garlic, minced
2 green onions, chopped
2 mild green chilies, chopped
Juice of one lime
Pinch of red chili powder
Salt and pepper to taste

Blend all ingredients except onions and chilies in a blender or food processor until smooth, adding water until desired consistency is reached. Garnish green onions and chilies serving warm or at room temperature.
