Gluten is a general name for the proteins found in wheat (durum, emmer, spelt, farina, farro, KAMUT® khorasan wheat and einkorn), rye, barley and triticale. Gluten helps foods maintain their shape, acting as a glue that holds food together. Gluten can be found in many types of foods, even ones that would not be expected
I want to alert our readers who are gluten sensitivity, gluten intolerant and have celiac disease to check with their physicians before consuming the ancient grains, such as spelt and einkorn.
Whole grains are packed with nutrients, including protein, fiber, B vitamins, antioxidants, and trace minerals, including iron, zinc, copper, and magnesium. A diet rich in whole grains has been shown to reduce the risk of heart disease, type 2 diabetes, obesity, and some forms of cancer. Whole-grain diets also improve bowel health by helping to maintain regular bowel movements and promote growth of healthy bacteria in the colon.
