Thanks for your informative gluten article. The 50 landrace wheats tested by Hetty are safer. They are available for growers and bakers today. Why do you neglect them? Modern wheats have been bred to be dependent on agrochemicals to survive, whereas the landrace heritage wheats yield higher in organic fields, are safer for gluten sensitivities and more delicious!
